We all love American food. We love it so much it's featured on nearly every pub menu in sight and escaping its wrath is becoming less and less likely. From old school American diners to soul food favourites, our national obsession isn’t going away anytime soon. At least my personal one isn’t.
The man who helped shape this delicious scene is Gregory Llewellyn of Hartsyard in Newtown - easily one of the best American influenced restaurants in town and definitely the most innovative. The Newtown restaurant hasn't failed to retain its popularity with fried chicken so good they named their cookbook 'Fried Chicken and Friends' after it. And if you love a good story, it has that too. Hartsyard is one intriguing place.
In this week’s episode of PICKLES, I hang out in the Hartsyard kitchen where Gregory shows me how to make one his signature dishes, talks Australia’s food scene and the secret to making it a good one. Take a peek (and have something to eat on standby...)
